Overnight Steel Cut Oats with Caramelized Strawberries, Banana, Flax, Nuts, and Seeds

These might be the best overnight oats I've ever made. Not a bad way to start off the blog, I guess! Full of creamy caramelized strawberries, steel cut oats, banana, peanut butter, honey, flax seeds, chia seeds, pumpkin seeds, nuts, and a splash of almond milk, these oats pack a serious nutrition punch! And they're pretty delicious, too.





I guess you can have the best of both worlds. 


Overnight Steel Cut Oats with Caramelized Strawberries, Banana, Flax, Nuts, and Seeds

1/8 cup raw steel cut oats
1/3 cup water
1/4 cup almond milk
3 strawberries
1 tsp honey
1 tsp peanut butter
1/2 small banana, mashed
1/2 table spoon chia seeds
1/2 tbsp pumpkin seeds
1 tsp flax seeds
1 tsp cashews
5 almonds, sliced
1 brazil nut, sliced


Cook the oats slowly until all the water is absorbed. Then, add the almond milk and let that adsorb too. Meanwhile, heat up a saucepan and add the honey followed by the strawberries. Let them caramelize until they match the consistency you'd like. I let mine go pretty mushy. When it's all ready, pop it in a jar and add the remaining ingredients! You may have to splash it with a bit of water if it gets thick. Remember, it thickens overnight! You can also eat this hot, it's good either way. I like to wrap it up and stick it in the fridge so I can delight myself the next morning with a scrumptious treat.
